If you love nachos, but are looking for a healthier version this holiday season, try these cauliflower nachos. My sister, who is always exploring healthy remakes of classic recipes, made these for Grey Cup and said they were pretty tasty and guilt-free (well except that they’re covered in cheese).

Mix 2 Tbsp vegetable oil, ¼ tsp garlic powder, ½ tsp ground cumin, ¼ tsp chili powder, ¼ tsp salt, in a bowl. Wash and chunk one head of cauliflower. Add chunks to the spice mix and stir to coat.

On cookie sheet lined with parchment paper, roast in 350F oven for 20-30 minutes, turning half way. Roast until cauliflower chunks are cooked but too soft.

Add whatever toppings you like, such as: chopped tomatoes, jalapeno pepper rings, black olives, green onions etc. then top with your favorite grated cheese. Return to the oven until cheese is melted-watch it closely so it doesn’t burn.  When done sprinkle with fresh cilantro and fresh lime juice, the lime juice is a must to give it a nice kick.
